Method
Fermentation times vary; drink at peak fizz. The creator prefers brown sugar over white.
- Rinse the pineapple skins with a brush and water only, avoiding acidic or alkaline soaks.
- Pack the skins, core, and pineapple chunks into a half-gallon mason jar.
- Add the brown sugar, cinnamon stick, and cloves.
- Fill the jar with filtered water.
- Cover with a cloth or loose lid and leave on the counter until very bubbly, about 48 hours.
- Strain into swing-top bottles, seal, and leave about 6 hours to build carbonation.
- Chill and open carefully, as the soda foams up on opening.
